Born and raised in Mexico City, Mexico, Victor Hugo Raya learned to cook traditional Mexican cuisine by watching his grandmother in the kitchen preparing recipes passed down from his ancestors, and that used flavourful local ingredients found at local markets. He often visited his family in Oaxaca, where his great aunts taught him traditional techniques and recipes typical of that region.
Together with more than 20 years’ experience in restaurants, Victor Hugo brings his passion for Mexican cuisine and Mexican flavours with him to Alberta. In 2016, Victor Hugo co-launched La Mar Mexican Mobile Kitchen, which won Best Food Truck – People’s Choice at the 2017 Taste of Edmonton festival. Victor Hugo now works as pizziolo with the team at Buco – Epcor Tower in downtown Edmonton.
