Roasting a whole turkey isn’t the only way to serve your Thanksgiving turkey. In fact, breaking down your bird allows you to cook your turkey quicker while also nailing the temperature differential – because white and dark meat cook best at different temperatures. So this fall, Kathryn and Elyse will be teaching you how to separate your turkey into breast and legs and how to prepare each and cook separately for the juiciest, most evenly cooked turkey dinner you’ve ever had – we promise the butchery effort is worth it. Our menu includes a Turkey Leg Ballotine, Roasted Turkey Breast, Confit Turkey Leg, and Stuffed and Rolled Turkey Breast. with a Wild Rice Pilaf and Roasted Root Vegetables on the side, a Pumpkin Cheesecake for dessert.

This class is not suitable for vegetarian diets or gluten free diets.

Class Fee:  $125 per person, plus GST. Your Fee Includes:  a 3 1/2 hour class, a full meal with drink pairings and a recipe pack to take home.
