Join Kathryn for this introduction to the ingredients and techniques  needed to make your own Red Thai Curry Paste. We’ll teach you how to use a mortar and pestle to pound the right spices and aromatics into a fragrant paste. And you’ll learn how to use your curry paste as the base for a deliciously spiced Red Chicken Curry with Thai Eggplant and Squash, served with steamed jasmine rice. Plus we’ll discuss alternative proteins and vegetables, and vegetarian and vegan options too. And if you’d like to add our Pat Thai to the night’s menu, you can join us at 5 to make our Pat Thai as well!

Ingredients for Red Curry Paste*: dried red chilis, red bird’s eye chilis, coriander seeds, cumin seeds, white peppercorns,  garlic, lemongrass, cilantro roots, kaffir lime leaves, galangal,  shrimp paste, salt, sweet paprika (optional, for colour)

Ingredients for Red Chicken Curry with Thai Eggplant, Squash & Peas*: coconut milk, chicken stock (or you can use vegetable or shrimp stock), red curry paste, coconut oil (or use peanut, canola or grapeseed), boneless chicken breast or thigh meat**, peas (fresh or frozen, you can also use a non-starchy vegetable of your choice), small round Thai Eggplants, kabocha squash,  kaffir lime leaves, fish sauce, palm sugar, Thai basil leaves, Bird’s Eye Chilis (optional to finish), steamed jasmine rice and nam pla prik to serve

Ingredients for Nam Pla Prik*: garlic cloves, red thai chilies, palm sugar, fish sauce, lime juice

* Please note that we will be discussing potential substitutions for ingredients during your class.

** Please note protein substitutions can be made. You can substitute 1 lb shrimp, pork, beef or chicken. For a vegetarian version you can use more vegetables and (optional) tofu and substitute Vegetarian Fish Sauce and Miso Paste for the Fish Sauce and Shrimp Paste

Class Fee: $27.50 plus GST (pricing is per device and allows multiple participants to attend using a single device). What’s Included: A 105-120 minute virtual class plus a recipe pack including info on equipment needed. Your recipes will be delivered by email in advance, so you can shop for ingredients and cook along with us during your class if you wish.

Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS here. Upon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.

Once downloaded Zoom will help you set up your free account then you’re ready to join us. Zoom will prompt you and ask for permission to use your devices camera and audio, please accept the requests. Once logged in click “Join” from the home page and enter your Meeting ID, which will be sent to you by email with your recipes.
