Join Brooke and learn how to make Jambalaya, a southern favourite combining rice with Sausage, Peppers and Shrimp. And while the Jambalaya is cooking, she’ll whip up a Remoulade Sauce and some Deep Fried Okra, the classic accompaniments for her fragrantly delicious Jambalaya.

Ingredients for Jambalaya*: 8 oz andouille sausage, or use fresh Chorizo or Italian sausage, 1 boneless-skinless chicken thigh, 3/4 pound large fresh shrimp, 1-2 tbsp grapeseed or canola oil, 3/4 cups onion, 3/4 cups celery, 3/4 cups green bell pepper, 2 cloves garlic, 1 1/2 cups long grain rice, 3 cups chicken stock, 1 tbsp fresh thyme leaves, 1 bay leaf, 1/2 tsp smoked paprika, cayenne pepper, 1 tbsp chopped fresh parsley, salt and pepper, sliced green onion to garnish

Ingredients for Deep Fried Okra*: 2 pounds okra, 2 cups flour, kosher salt, 1/2 tsp pepper, 2 eggs, 1/2 cup milk, canola oil for deep frying

Ingredients for Remoulade Sauce*: 1 cup mayonnaise, 1 1/2 tsp finely chopped garlic, 1/2 lemon juice, 3 tbsp creole mustard, or use grainy mustard, 1 tbsp hot sauce, 2 tbsp relish, 1 green onion, 1 tsp Worcestershire sauce, 1/2 creole seasoning, salt

* We will be discussing potential substitutions for ingredients during your class

Class Fee: $25.00 plus GST (pricing is per device and allows multiple participants to attend using a single device). Your Fee Includes: A 90 minute virtual cooking class plus a recipe pack including info on equipment needed. Upon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.

We use Zoom for our online classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS here.

Once downloaded Zoom will help you set up your free account then you’re ready to join us. Zoom will prompt you and ask for permission to use your devices camera and audio, please accept the requests. Once logged in click “Join” from the home page and enter your Meeting ID, which will be sent to you by email with your recipes.
