We are very grateful to Bumble for sponsoring our newest class featuring two of our favourite Brunch dishes, one savoury and one sweet, paired with delicious breakfast Cocktails, all accented with Honey! We’ll be starting with savoury, as Kathryn teaches you how to make Chilaquiles, a Mexican Brunch fave featuring Fried Corn Tortillas Chips finished in Red Sauce then topped with Queso and finished with Honeyed Bacon and a perfectly Fried Egg. Then Shannon will take over as she shows you how to whip up her delicious French Toast, stuffed with Honeyed Mascarpone. And Sasha will be mixing up a Honey Mango Margarita to pair with the Chilaquiles, as well as a Bee’s Knees Cocktail to match our French Toast.
Ingredients for Chilaquiles*: corn tortillas (preferably stale), unscented oil, oil for deep frying, ground cumin (optional)
Ingredients for Red Chili Sauce*: ancho chiles, tomatoes (roma or vine), small onion (white or yellow), garlic, ground cumin, mexican oregano, epazote, red wine vinegar, olive oil, chili soaking liquid (or stock)
Ingredients for Honeyed Bacon*: bacon slices, honey, ground chili pepper (optional)
Ingredients for French Toast with Mascarpone Filling*: thick slices of your favorite loaf bread, cream cheese, orange zest and juice, honey, vanilla
Ingredients for French Toast Custard*: flour, whole milk, whipping cream, eggs, sugar, vanilla
Ingredients for Apple Topping*: cooking apples (granny smith, honey crisp etc…), unsalted butter, brown sugar, salt, whipping cream, dark rum/brandy/amaretto or liqueur of your choice (optional)
Ingredients for Bees Knees*: Gin, Fresh Lemon Juice, Honey Syrup
Ingredients for Honey Mango Margarita*: Patrón Mango, Patrón Silver Tequila, Fresh Lime Juice, Honey Syrup, egg white
* We will be discussing potential substitutions for ingredients during your class
If you leave out the Bacon, then our Chilaquiles are perfect for Vegetarians. Our French Toast is Vegetarian too.
Please note that your registration fee will be donated, in full, to the Zebra Child Protection Centre.
Class Fee: $15 plus GST. Your fee will be donated in full to the Zebra Child Protection Centre. Your Fee Includes: A 90-minute virtual cooking class plus a recipe pack including info on equipment needed. Your recipes will be delivered by email within 24-48 hours of registration, so you can shop for ingredients and cook along with us during your class if you wish.
Software Requirement: We are using Zoom for our virtual classes. If you aren’t already using Zoom you can download their free app for Windows, Mac, Android or Apple iOS here. Upon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.

Once downloaded Zoom will help you set up your free account then you’re ready to join us. Zoom will prompt you and ask for permission to use your devices camera and audio, please accept the requests. Once logged in click “Join” from the home page and enter your Meeting ID, which will be sent to you by email with your recipes.
