People say there are at least a hundred regional Biryanis across India. The north Indian Lucknow style Biryani is one of the most famous styles of this high-end Indian specialty combining rice, meat, herbs & spices, and garnishes. Addie will share his knowledge and recipe for a classic Lucknow Biryani covering the skills and techniques that go into making a good Biryani and developing a deliciously meaty flavour in the rice. And as an accompaniment he’ll be preparing a cool and refreshing Cucumber & Mint Raita too.
Ingredients for Biryani, Lucknow Style*: 1 kg chicken legs with bone, 500 g Basmati rice, 1/2 cup oil, 1 medium red onion, 1 tbsp ginger paste, 1 tbsp garlic paste, 5 whole green cardamoms, 5 cloves, 1 inch piece of cinnamon stick, 1/2 nutmeg, 1/4 tsp ground mace, 1/4 teaspoon ground cardamom, 2 tsp Kasmiri chili powder or paprika, 1/2 cup yogurt, 1/2 cup milk, a pinch of saffron, 1 tbsp kewra water (optional, and available at Indian grocery stores)
Ingredients for Cucumber Mint Raita*: 1 cup greek yogurt, 15 leaves of mint, 1 cucumber, 2 tbsp oil, 1 tbsp cumin seeds, salt

Class Fee: $25.00 plus GST (pricing is per device and allows multiple participants to attend using a single device). Your Fee Includes: A 120 minute cooking class plus a recipe pack including info on equipment needed. Your recipes will be delivered by email within 24 hours of registration, so you can shop for ingredients and cook along with us during your class if you wish.

Upon purchase, your meeting ID and password will be included in your Event Confirmation email – please be sure to save this information as you will need it to join your class.

Once downloaded Zoom will help you set up your free account then you’re ready to join us. Zoom will prompt you and ask for permission to use your devices camera and audio, please accept the requests.
