If there’s one food that evokes that sense of exceptional, high-end Indian food, it is Biryani. Rice, meat, herbs & spices, garnishes. It seems easy, but there is a level of skill and technique that goes into making a good biryani and developing that meaty flavour in the rice, and in this class Aditya Raghavan will showcase different styles of biryani. People say there are at least a hundred regional biryanis across the country. The Indian subcontinent has had several Islamic dynasties that have shaped its food culture in the north. On the other hand, the south, with its long coast, has had maritime influences, particularly from Arab traders, for over thousand years. We will showcase two distinct styles of biryanis – the Mughal dynasty-influenced Lucknowi Biryani and the Malabari Biryani from Kerala. Along with that, we will make three side dishes so that you are equipped to have a biryani party next time you have guests over.
