Wine & Food Masterclass with William Bincoletto January 16

On Friday January 16th we’re holding our first Wine & Food Pairing Masterclass of 2015, with our dear friend and Sommelier Extraordinaire William Bincoletto, Principal Sommelier at Vines Wine Merchants in Riverbend.

William brings over 35 years experience in the food and beverage industry to Edmonton. Formally educated as a sommelier in France and Italy, with additional training in Germany, he was Alberta’s first certified Sommelier. Over his many years in the business, William has become a well known and respected name. He has worked as a Sommelier and Wine Consultant, and as “Sommelier in Residence” of the NAIT School of Hospitality as well as having been invited as a sommelier educator for the World Association of Chefs Societies. And he has been selected as an International Wine Judge for Concours Mondial de Bruxelles, Concorso Enologico d’Italia, and the Cata d’Or in South America.

The theme of January’s Masterclass is pairing Italian wines with food.  We’ll be starting with Crostini and bubbles on arrival, then moving on to 3 courses of Italian food, each paired with two different Italian wines.  We’ll ask you to taste each wine without, then with the accompanying food.  Then we’ll weigh in on who preferred which wine and why. And William will guide us through the wine and food pairing principals at work, and why the wines work with our recipes – or why they don’t.  The emphasis is on the wine, so we’ll be focused on what foods to choose to complement your Italian wines, rather than the other way around.

Each course will be served as an Appetizer Size portion, but you can expect to go home substantially and well fed. We’ll start with a Carpaccio, then move on to a Pasta or Risotto, and finish with a Secondi of Italian meat – we’re considering a braise of  beef short ribs or some lamb – leave it with us and we’ll surprise you on the night!
